CMS for beginners

Have been inactive on our websites for a couple of years but about to get a couple of projects going ...
i) our intranet (its only a 6 person company but we run a shared information intranet which is of great assistance) needs updating and I want to add pages which relate to provider information - I have designed the pages (set out as forms i.e Q&A but not using 'forms' functionality) within Flex Grids and Tables within the Items) but I would really like our 'case managers' to be able to complete/update these as they speak to the providers and update knowledge about services and criteria.
I have a friend who wants me to build a site with somewhat better SEO (my stronger area) than their current self built (quite pretty but SEO weak) site - but would still like to update certain information panels etc.
Both obvious CMS projects I assume, but have never used this functionally before, so some dumb questions:
i) Am I likely to be best doing this solely within the WB environment (new functionality coming imminently I gather - just going to upgrade from 14 now anyway) or am I better going the 'Cushy' or 'Surreal' (seems to be the better choice of the 2 ?) CMS route - or something else ?
ii) If my three 'case managers' update various suppliers info during the week does/can this feed back somehow to the WB file that I will be working on the coming weekend or is there a high likelihood if I make some changes in the same page that I will overwrite destroy their efforts in the process ?
